Oxtail Potjie Kos

Recipe is inspired by my Aunt and Uncle. Since I was young I knew when I saw the pot it was gonna be a great meal you can make this with beef or chicken but with Oxtail it is the private school of Potjie.

  1. Light your fire prepare your pot.
    Add Oil let it heat up then add your onions let them brown abit then add Garlic.
    Once it's all brown and nicely blended add your Oxtail to the mix and stir.

  2. Keep stirring to ensure the meat does not stick to the pot (you know fire is hard to control sometimes) then add a quarter cup of water not too much then put 2 tea spoons of steak and chops spice, add Thyme so it cooks with the meat and adds flavour through out.

  3. You will need to keep adding water as it burns out (if you are making rice please use the rice water it makes it nice and thick) but not too much at a time. Do this for at least 45 min we want the meat to cook. Then add your potatoes and Carrots at the same time. Break 2 beef stock cubes to this mix and let it cook.

  4. 20 min after adding your potatoes and Carrots. Add the baby corn and Mushrooms. Continue to season as you gradually add water (Steak and Chops, Thyme and Mixed herbs spice and Garlic) let the veggies cook until they are soft.

  5. Once you are 1 hour and 30 min in your meal is coming together take your Oxtail Soup Mix in a separate bowl use some hot water about a cup and mix it then add to your pot let it simmer on low heat move some coal away from the pot but it must still be bubbling. Check your meat is soft check your potatoes. Add spices and salt to your taste preferences and you should be done.
